Haisan

Chef Steven Che, the same chef behind one of Vancouver’s top pizzerias, Just Pizza, is preparing to open a new fine dining restaurant on Commercial Drive this fall.

Called Haisan, the restaurant will feature a sixteen-course menu that’s shaped by Steven’s training in renowned kitchens across the globe.

“Our menu is Chinese Pacific Northwest — one point of view, cooked the way I already think about food,” said Che. “Haisan cooks for the families who’ve lived this integration for generations, and for anyone curious what it becomes at this level of craft.”

The menu is designed to bring together childhood flavours that Che grew up loving, while also showcasing the ingredients that our coast has to offer.

Haisan is expected to open its doors this fall.

Discovery Brewing

The brewery, dubbed Discovery Brewing, is the project of longtime best friends and co-founders Aleksander Zuber and Winston Lin. Here, the team is stepping away from your standard taproom snacks with a fresh menu designed by the founders and their team.

“Our launch menu brings together 10 to 15 signature dishes designed around small, shareable tapas plates,” explain the co-founders in a release. “It lets guests try a little bit of everything or easily build out a full meal.”

As for the beer, it plans to feature 12 house beers on tap, ranging from light, crisp session beers to dark, rich, and experimental brews. The crown jewels of the opening tap list are a classic Munich-style Helles lager named 815, and a West Coast Pilsner called Lovelace.

Zumi Revolving Sushi Bar

Zumi plans to offer folks in Vancouver a kaiten sushi experience, also known as conveyor belt sushi or sushi train.

“The belt is the shortest path from the cutting board to your chopsticks. Each plate leaves the chef’s hands and reaches your seat in under a minute, so nothing sits under glass and nothing waits for a ticket,” shared the restaurant on its website.

Zumi will offer three different options for folks to enjoy its sushi offerings. Of course, there will be the belt, which will feature seasonal dishes that customers can take as they pass and pay by plate.

There will also be 12 seats located before the chefs, where guests can sit and order dishes that won’t be found on the belt, as well as “Zumi To Go,” which will feature nigiri boxes and hand rolls.

Mandy’s Gourmet Salads

This new location (and Vancouver’s first) is designed as an express-format spot with a 16-seat outdoor patio. Here, folks will find the full Mandy’s menu complete with its signature salads, dressings, smoothies, bowls, and more.

There will even be a Kits-exclusive salad only available at this location, titled the Salmon by the Sea. This salad will feature smoked salmon, avocado, French beans, purple cabbage, quinoa, and a tempura sesame crunch, all tossed in a lemon dill dressing.

Mandy’s will open its doors on Sept. 23 and operate daily from 8 a.m. to 9 p.m. Additionally, Mandy’s will be offering an exclusive Mandy’s Vancouver tote bag and complimentary ice cream sandwich with every purchase on opening day, while supplies last.

Ramen Danbo

The beloved ramen restaurant known for its Fukuoka-style Tonkatsu ramen is preparing to open two new locations in Vancouver.

First, an express location with self-order kiosks is opening at UBC on Sept. 23, offering a convenient spot for those looking to grab a quick bite.

Secondly, Yaletown will soon be home to a Ramen Danbo location too, though an exact opening date for this outpost has yet to be shared.

Como Ultramar

The team behind the much-loved Mount Pleasant tapas bar Como Taperia is debuting a new concept in the city, this time with a focus on seafood.

Founders Shaun Layton and Frankie Harrington are preparing to open the doors to Como Ultramar, a restaurant inspired by their travels throughout Northern Spain.

“Ultramar is inspired by the places Frankie and I travel to often during our annual trips to Spain,” said Layton. “There will be a definite focus on the cuisine of Northern Spain, such as the seaside towns of the Basque Country, Cantabria, and Galicia, but also the old-school seafood bars of Madrid, the modern, playful seafood restaurants of Barcelona, and the tabernas of Cádiz. In all these places, there is just big love for seafood in its simplest forms, but yet, full of flavour.”

The 2,500 sq. ft. space will feature a dining room and a mezzanine on the second level. As for the building itself, it’s located on Faber Block and was originally constructed in 1926 (formerly known as The Carolina). Over its century-old history, the building’s previous tenants include popular neighbourhood spots like Black and White Grocery and Seb’s Cafe.

Navvy House

West Vancouver’s next restaurant is preparing to open its doors in the historic and newly restored building, and it’s being brought to life by an all-star team.

Called Navvy House, the project is brought to us by At Home Hospitality, the team behind Vancouver’s Banter Room and the award-winning Prophecy and will be opening inside the Navvy Jack House at 1768 Argyle Ave.

The menu here was designed by Executive Chef and Operating Partner Mike Rose, who was born and raised in West Vancouver, serving bites that follow the seasons and the shoreline, drawing inspiration from Pacific and Atlantic coastal traditions and the land in between, with a menu described as “unfussy, bold, and built on natural flavours.”

As for the space itself, it will pair original heritage details with modern design and views over the Burrard Inlet, built for long lunches and evenings that run past sunset.

Jersey Mike’s Subs — Vancouver

We finally have confirmation on where and when Jersey Mike’s Subs will be opening in Vancouver.

In a press release, Jersey Mike’s shared that it will be opening in Kitsilano at 1864 W. 4th Ave., the former home of Purebread Bakery. An exact opening date has yet to be shared, but the sub chain was able to provide an anticipated October opening.

Rumours of a Vancouver location started circulating following the announcement that the beloved sandwich chain planned to open its first-ever B.C. location in Kelowna.

Earnest Ice Cream — Granville Island

Earnest Ice Cream shared that its fifth location will be on Granville Island, with an anticipated opening slated for this fall.

“We try to make each shop unique,” said co-founder Erica Bernardi in a press release. “This could be our last location, so we knew we wanted it to feel really special. We’ve always trusted our gut when it comes to choosing spaces — community first, and then everything else. It’s harder than it sounds to find somewhere that checks all the practical boxes and just feels right. This one does.”

The local mini chain shared that this new location will be rooted in Granville Island’s character. The space, designed by Studio Roslyn, will draw inspiration from Granville Island’s maritime history while also featuring work from local artists throughout the space.

Bar Supernova

While technically open as a summer rooftop patio pop-up, Bar Supernova is expecting to officially launch its downstairs space come this September.

Supernova labels itself as a waste-conscious cocktail concept, using byproducts from other bars and restaurants that would otherwise be thrown out to inform its menu and make its drinks.

Rosalia Osteria

Culinary duo Dom and Frank Morra are doing it again. After bringing multiple much-loved Italian concepts to the city, including Via Tevere, Dante Italian Sandwich, Don’t Argue Pizza, and Straight Outta Brooklyn, the brothers are preparing to launch their latest restaurant, called Rosalia Osteria.

Named after their grandmother Rosalia, the new 33-seat, 600 sq. ft. restaurant is opening in the former home of Robba da Matti Yaletown’s outpost.

Here, the team will be serving a pasta-forward menu inspired by the warmth and tradition of Sunday dinner at Nonna’s table. Think shareable antipasti, fresh seasonal salads, classic Italian desserts, and a thoughtfully curated drinks program all anchored by its house-made pasta.

Eggslut Vancouver

Vancouver is home to plenty of great breakfast sandwiches, and now international chain Eggslut is looking to join the fray when it opens the doors to its first location in the city.

Signs for the new outpost have gone up at 1136 Albeni St., steps away from other heavy-hitter restaurants like Din Tai Fung, Paris Baguette, Touk, and more.

Founded in Los Angeles in 2011, the breakfast destination quickly became popular for its elevated take on classic breakfast sandwiches. Since then, it has expanded throughout the U.S., U.K., Japan, and Australia.

Spud Shack — Cloverdale

Spud Shack has become a Metro Vancouver favourite for poutine, and now the team is preparing to expand into Surrey with its second location.

For those unfamiliar, Spud Shack is best known for its wacky and wonderful poutine creations. While you’ll be able to find the classic gravy and cheese curd variety here, the menu also boasts other options like The Gaucho “Cowboy” (Argentinian coffee-rubbed beef slowly braised with beans, charred onions, roasted pepper, and tomato sauce with chimichurri, roasted garlic mayo, and crispy fried onions), Jamba (chorizo sausage, chicken, bacon, shrimp, red peppers, onion, and Andalusia mayo), and The Night Market (ginger beef, spicy mayo, kimchi, crispy wontons, and green onions).

The team is also known for its handhelds, with its signature being the Effin’ Good Burger featuring smoked onion mayo, BBQ sauce, bacon, tomato jam, lettuce, pickles, and cheddar with an all-beef patty served on a brioche bun.
