Vancouver is getting a pay-by-plate revolving sushi bar this winter

A new sushi restaurant celebrating the art of kaiten is preparing to open its doors in Vancouver.

Called Zumi, the restaurant is offering folks in Vancouver a kaiten sushi experience, also known as conveyor belt sushi or sushi train.

“The belt is the shortest path from the cutting board to your chopsticks. Each plate leaves the chef’s hands and reaches your seat in under a minute, so nothing sits under glass and nothing waits for a ticket,” shared the restaurant on its website.

Zumi plans to offer three different options for folks to enjoy its sushi offerings. Of course, there will be the belt, which will feature seasonal dishes that customers can take as they pass and pay by plate.

There will also be 12 seats located before the chefs, where guests can sit and order dishes that won’t be found on the belt, as well as “Zumi To Go,” which will feature nigiri boxes and hand rolls.

As for decoration, Zumi shared that it will be keeping this simple.

“The room stays plain on purpose, so the plates carry the colour,” added the restaurant.

The team did note that there will be seasonal branches by the door like you’d find in a Tokyo kaiten-ya. Branches will be cut that morning and gone by closing.

Located at 1588 Alberni St., the new restaurant will be inside the Alberni by Kengo Kuma tower, something that Zumi is also very proud of.

“Kengo Kuma drew the tower above us; we kept his logic downstairs. Wood you want to touch, light that stays low, and a belt that moves at the pace of a slow walk,” wrote the restaurant.

The news of this opening comes hot off the heels of Vancouver’s sushi train restaurant Sushi Aboard announcing it would be closing on Sept. 7.
