Highly anticipated restaurant from team behind Michelin-starred St. Lawrence to open this month

In December of last year, Dished reported that the team behind the Michelin-starred restaurant St. Lawrence would be opening a new concept on Fraser and 27th. Fast-forward to today, and we finally have an opening date for the highly anticipated new restaurant.

Chez Céline shared that it will be opening its doors on Friday, May 23.

“Expect the edgy charm of Montréal, the effortless elegance of Paris, and the communal warmth of Québec’s casse-croûtes come alive inside a beaming, beautiful room on the corner of Fraser and 27th,” said Chez Céline on Instagram.

The exact menu for the new concept has yet to be announced, but if it’s anything like St. Lawrence, we anticipate finding a selection of standout Quebecois dishes. Highlights from St. Lawrence include its tourtière, ratatouille, and oreilles de crisse (fried pork rinds).

Not only is St. Lawrence Michelin-starred, but it also made La Liste’s top 1,000 restaurants in the world.

“It’s been a crazy few months leading up to our grand opening, but we’re over the moon and can’t wait to embrace our new neighbourhood and community,” added Chez Céline.

Located at 4298 Fraser St., Vancouver, the restaurant is opening in the former space of Say Mercy!, which was a Michelin-recognized spot that closed on November 2, 2024.

Additionally, the restaurant is joining a growing foodie hot spot with many Michelin-recognized restaurants in the area, including Zab Bite (Michelin-recommended), Bar Bravo (Michelin-recommended), and Masayoshi (One Michelin Star), just to name a few.

Chez Céline shared that reservations will be opening soon, but that there will be ample room for walk-ins as well.
