Inside the 15+ year old Shanghainese restaurant serving authentic soup dumplings in Metro Vancouver

If you’re in Metro Vancouver and looking for delicious and authentic dumplings, we have a spot for you.
Recently, Dished had the chance to revisit the Richmond Dumpling Trail and dine at three of the seventeen restaurants along the trail.
For those unfamiliar, theĀ Richmond Dumpling TrailĀ is a self-guided culinary experience that includes different eateries across Richmond with a wide array of cultural varieties. The experience is also meant to take the intimidation out of ordering, which means you donāt need to know a ton about dumplings in order to fully enjoy them.
Each location can be found on theĀ Tourism Richmond website, and they even have some set itineraries for you to try if you need a starting point. However, you can go rogue and hit each dumpling spot in whatever order you want.

During our trip, we had the pleasure of dining at Shanghainese eatery Suhang Restaurant, which was founded in 2007, and learnt the secret of how to make its delicious soup dumplings.

Having enjoyed many soup dumplings ourselves over the years, we never really stopped to wonder how they managed to get the soup inside of the dumpling wrapper (though if you asked us, we’d put our money on a giant soup-filled syringe). It turns out that they use broth that has cooled into a gel that they mix with the meat filling before wrapping it and cooking it. As the interior cooked, the soup would liquify.

This all resulted in a flavour-packed explosion of dumpling goodness. Plus we also learnt that some people make a tiny hole in their dumplings with a chopstick to add a type of vinegar inside.
Other tasty dumpling creations we tried were the veggie dumplings, made with a dumpling dough mixed with spinach to give it a green colour.

During our visit, we were told that head chef Calvin Tong is bringing his dumpling expertise all the way from Shanghai, where he worked in a very famous hotel. Whether you’re ordering steamed soup dumplings, pan-fried pork dumplings, or those delectable veggie dumplings, you know you’re getting a taste of authentic Shanghainese cuisine.
