What to expect from Vancouver's new restaurant offering a 'day-dinner-dark dining experience'

After first reporting on it earlier last month, we have more details about Yaletown’s new day-to-dark social destination, Ray’s — including when you’ll be able to visit.

The new, 270-seat restaurant will be opening its doors in the former home of Yaletown Distillery, and plans to offer what it calls a “day-dinner-dark dining experience,” presenting guests with a vibrant setting that evolves from day to dinner to late night.

“Ray’s is built by people who care about the food, the room, and each other,” said Kyle Tweter, president of Ray’s. “We wanted to create a place where guests can come in at any time of day and feel taken care of, without formality.”

The restaurant shared that its interior draws inspiration from Yaletown’s heritage character, including high ceilings, exposed brick and beams, and a full-length bar to anchor the room. It also features an Art Deco influence through the use of one-of-a-kind tapestries from local artists. You can also expect lush greenery and layered lighting to support the day-to-night transition.

As for the food, think playful takes on familiar classic dishes, including Sizzling Chicken Fajitas,Ā Truffle Spaghetti and Meatballs, andĀ Szechuan Green Beans.

You’ll also find plenty of burgers, including theĀ Ultimate Burger, which features three smash patties topped with an onion ring.

“We focus on using quality ingredients and letting them speak for themselves,ā€ says Chef Matt Deacon-Evans. “The goal is to take familiar dishes and execute them with care, without overcomplicating things.”

As for drinks, there are plenty of easy-to-enjoy favourites inspired by classic flavours such as the Orange Julius MargĀ andĀ Banana Daiquiri Slush.Ā There will also be a curated selection of wine and beer.
