Inside Din Tai Fung's long-awaited first Canadian location in Vancouver

A highly anticipated restaurant many Vancouverites have been waiting for is Din Tai Fung Vancouver, the brand’s first Canadian location. And with the announcement of impending arrival dating back to late 2023, people have been wondering when exactly the Taiwanese restaurant chain would be opening its doors. Thankfully, it looks like we won’t have to wait much longer to enjoy those famous dumplings.
Dished got a sneak peek inside Din Tai Fung’s new Vancouver location ahead of its opening, as well as more information about the highly anticipated spot and, most importantly, an idea of its opening date.
When it comes to the space, Din Tai Fung told Dished that this location is inspired by Chinese Zen gardens, with a similar colour palette and atmosphere that can be found at its Glendale and Bellevue locations. This aesthetic goes right down to the plant life, with a faux bonsai set in the main dining area and the rock garden that is planned for the entrance and host area.

The space itself is 16,412 sq ft. and will have a total of 311 seats. Most of these will be found in the dining room with 150 seats, followed by its large patio with 88 seats. There will also be 27 bar seats and 46 seats in its showcase dining room.
The restaurant features large windows with wood screens carved with various patterns to let in unnatural light and provide a view of downtown Vancouver. There are two different styles of stone floor planned, one of which is meant to mimic garden path-like pebbles leading guests through the entrance towards the bar.

Upon entering, guests will find the dumpling expo kitchen, one of Din Tai Fung’s claims to fame. For those unfamiliar, this is where all of Din Tai Fung’s dumplings are made and a window where guests can view the dumpling-making table and the hands of the chefs making these delicious creations.

Past the showcase dining room and bar is the main dining area, which continues with the large windows illuminating the chocolate-coloured tiles and blue wallpaper with intricate designs. This is where the vast majority of the seating will be located.
