A new, elevated Mexican restaurant just opened on a buzzing Vancouver block

This most likely is not the first time you’ve heard us talking about the hot stretch on Alberni between Bute and Thurlow Street. Over the years, it’s seen plenty of new and notable additions when it comes to Vancouver’s restaurant scene. Think Din Tai Fung’s first-ever Canadian outpost, as well as the popular Korean bakery Paris Baguette and none other than Top Chef Canada season 11 winner Chanthy Yen’s new contemporary Cambodian restaurant Touk. Now, the latest in the long line of exciting new restaurants is officially opening its doors: Acuyo.

The restaurant touts itself as a spot that showcases the depth, diversity, and sophistication of authentic Mexican cuisine. The restaurant was founded by four partners with roots in Guadalajara, Mexico, united by a shared vision to introduce Canada to authentic Mexican cuisine that is grounded in tradition and presented with elegance, care, and intention.

The space is owned by Diego Ancona and Oscar Navarro, who always dreamed of owning a restaurant in Canada. Here, they joined forces with Rodrigo Lopez and Chef Rodrigo G. de Quevedo to bring the flavours and techniques of Mexico to Vancouver.

“Accuyo is founded on honouring traditional techniques and regional diversity,” said Head Chef Rafael Chavez. “We’ve built our concept around the ‘calor’ of  every detail, from the food to the experience.”

“Calor” is the Mexican concept of heat linked to health, balance, and emotional energy, and outlines Acuyo’s dedication to all things traditional.

As for menu specifics, highlights include Tableside Guacamole, which will be handcrafted tableside with avocado, tomato, onion, serrano, cilantro, and lime. There will also be a selection of tacos in varietals like Asadito (flame-grilled AAA ribeye with melted cheese, onion, cilantro, avocado salsa verde, and salsa roja served on fresh handmade tortillas), Taco Governador (sauteed shrimp with peppers and tomato in a crispy flour tortilla with melted mozzarella, avocado salsa, and salsa macha) and Taco Pesca del Dia (seasonal fish with zarandeado sauce served on handmade corn tortillas with slas macha, pico de allo, pickled onion, and avocado salsa).

There are also heftier entrees, including Zarandeado Octopus, which is marinated in adobo, grilled, and served in a charred banana leaf with papas and vegan serrano mayo.

“At its core, Acuyo is focused on delivering more than just a meal. We built a space focused on energy, connection, and providing genuine Mexican hospitality, where guests are welcomed in, encouraged to share, and immersed in a lively atmosphere. By combining traditional methods such as fire cooking and freshly prepared handmade tortillas, we offer a sophisticated yet approachable dining experience,” added Ancona.

The 84-seat restaurant, designed by LĂłpez, also focuses on the same philosophy, with elements focused on elegance and warmth alongside decor sourced directly from Mexico.

Acuyo is currently soft-opened, with a grand opening date scheduled for May 15.
