First look inside the highly anticipated Time Out Market Vancouver

We’ve been patiently waiting, and the time is finally here — Time Out Market Vancouver officially opens its doors on Thursday, May 28. But if you’re like us and simply can’t wait to check out the space, we’ve got you covered.

Dished went into Time Out Market Vancouver for a sneak peek to not only check out the space but also try some of the food from the 20 vendors available on site. And spoiler warning, plenty of deliciousness awaits.

In addition to all the kitchens, Time Out Market Vancouver has three bars on site, offering a curated program highlighting Vancouver’s vast local microbrewery scene alongside Okanagan wines and custom cocktails (including some zero-proof options).

Additionally, the market said it will be offering vibrant, year-round cultural programs alongside its curated food and drink offerings. Think live music, wine tastings, book signings, cooking demonstrations, watch parties, DJ sets, and family-friendly activities.

The space spans a whopping 51,0000 sq. ft. and features kitchens from some of the city’s top talents. Think major names like Vikram Vij, Chanthy Yen, and plenty more.

But enough with the preamble, we know what you’re here for: the food.

To start our foodie adventure through the market, we stopped by longtime Vancouver chef and legend Rob Feenie and his concept, Feenie’s.

Here, the team is serving up a selection of 100% beef hot dogs and kick-ass burgers made with wagyu beef and smashed to crispy perfection. You really can’t go wrong with ordering Feenie’s Burger ($18.99) — a handheld topped with maple-cured bacon, Canadian cheese, mushrooms, lettuce, onion, tomato, RF signature sauce, and Hobb’s pickles served in a toasted potato bun.

If you’re in more of a tropical mood, Feenie’s Hawaiian ($15.99) is another great choice. The same smashed 1.4 lb wagyu patty is served with caramelized pineapple and teriyaki sauce alongside all your typical burger offerings. However, it’s important to note that if you want fries, you’ll have to order them on the side.

Following our heavenly burger experience, we headed over to Barnacle — the new concept brought to us by the Bar Bravo team. Here, to no one’s surprise, is a seafood lover’s paradise.

The easy highlight from our experience was the Lobby Dogs ($19), which are essentially a lobster corn dog. Battered Atlantic lobster is fried and served with salsa macha and crispy barnacles.

But don’t worry, Barnacle is also serving up a plethora of raw seafood, too (we dare you to find another mall in Vancouver where you can find raw oysters ready to eat). The Tuna Tacos ($21) were also a favourite during our visit, served with pickled beets, avocado, and maple ginger packed inside a crispy wonton.

Following our stop at Barnacle, we made our way over to the lovely Chanthy Yen (who you may recognize from his win on Top Chef Canada season 11) and his latest concept, Mee Bar.

“With Mee Bar, I wanted to create something approachable and energetic while still honouring the flavours and memories I grew up with. Time Out Market Vancouver felt like the perfect home for this concept, especially alongside such an incredible community of chefs and restaurants shaping the city’s food scene,” Yen said in a release.

Must-try dishes here include the Mee Kola ($25), which features skewers of char-grilled meats served over chewy rice noodles and topped with a sunny-side egg. Additionally, the crispy Taro Rolls ($8) will also be a repeat order for us when we return.

If you’re feeling like something comforting, Pasta e Basta by Ask for Luigi is the place to go to fulfill all your carb-fuelled dreams. Cheese lovers will delight in the Alla Vodka ($24) with added stracciatella ($8).

If you’re in search of some damn good fried chicken, the DownLow Chicken team is also operating an outpost here featuring classic offerings alongside some new additions. Specifically, Truffled Nuggets ($13.99) served with a sour cream and onion dip that will absolutely knock your socks off.

And those looking for something truly special, PiDGiN is also on site, serving its signature Asian French fusion that’s delighted Vancouverites since opening in Gastown in 2013. The Foie Gras Rice Bowl ($42) is exactly as it sounds, a bowl of rice topped with delicious foie gras that melts in your mouth.

And if you’re a fan of anything sweet, you’re also in luck as Beaucoup Bakery not only opened an outpost here, but also debuted Beaucoup Creamery. Here, you’ll find a selection of specialty sweet treats like the Le Grand Croustillant GlacĂ© ($14), which is an ice cream sandwich that can best be described as an elevated KitKat that is decadent and delicious.

But don’t get it twisted, there is so much more than the aforementioned food to try. From new locations from the Boba Run and Mello teams to new concepts like MaKaam by Nutcha Phanthoupheng (a.k.a. the chef behind Baan Lao, the Richmond restaurant that was named the best in Canada two years in a row) and Peacock by Vikrim Vij, you could easily spend days just trying all the different vendors.
