Back in 2023, we spotted signs for a “mad restaurant experience” coming to Vancouver’s Hastings-Sunrise community. At the time, details were sparse, and the restaurant was shrouded in mystery. Now, it looks like we have some more details on what to expect from this new eatery.

“Step into a world where flavours defy expectations, and every visit is a whimsical adventure,” writes the restaurant on its website. “At Mad Hatter Bistro, we invite you to embrace the unexpected and the delicious.”

While photos of the space have yet to be shared, we’re told that “every detail is thoroughly designed to spark your curiosity and inspire memorable moments, encouraging you to create your own stories as you enjoy your fare.”

Currently, Mad Hatter is offering a sneak peek inside for those subscribed to its email list. Due to the nature of this pre-opening, the restaurant shared that it’s still fine-tuning the experience as they go.

So what can you expect? Well, Mad Hatter calls itself a “themed bistro experience” that features “playful details, curious touches, and a proper dish at your table.” It also added that, to keep “expectations tidy,” there are no live shows, no escape-room riddles, and no secret passwords at the door.

“The wonder is on the plate, in the details, and in what we’re building next,” wrote the restaurant.

Early peeks at the menu show a selection of pizzas, salads, poutines, other mains, and desserts. A drink menu has yet to be shared.

As for what took the restaurant so long to open, the bistro wrote, “We’re taking the long way on purpose. The aim isn’t to rush, but to craft an experience that’s thoughtful, a little unexpected, and very much worth the wait.”

An exact opening date has yet to be announced, but eager fans can sign up for Mad Hatter Bistro’s email newsletter in hopes of snagging a pre-opening reservation.
