Vancouver's 'newest restaurant' has been 18 years in the making

The team behind much-loved restaurants like Selene Aegean Bistro, AMA, and Nammos Estiatorio is gearing up to launch a new restaurant… well, sort of.
Gaia House has recently shared that it will soon be the operator behind the beloved French bistro Les Faux Bourgeois, which has been in operation for nearly two decades.
“Les Faux Bourgeois has always held a strong identity and our role is not to reinvent it, but to steward its legacy while still bringing something fresh and new to the table,” said Yianni Kerasiotis, who co-founded Gaia House with his brother Petro. “This is why we say Vancouver’s newest restaurant is 18 years old. We’re preserving the warmth, approachability, and unpretentious elegance, and at the same time, introducing a renewed sense of energy to the experience.”
The kitchen team will be led by co-chefs David Cassese (previously Sat Bains, Joe Beef, and Alo) and Brent Thornton (ELEM, Good Thief, Is That French), who both first cooked together at Vancouver’s Michelin-starred St. Lawrence.
At the revamped Les Faux, the menu will continue to celebrate the classic French bistro fare that it has been known for, with a focus on hyper-local ingredients and family-style dining.
Expect “Petits Plats” such as Beef Tartare, Escarot en Cocotte, and Pate en croute by Le Petit Chapeau, alongside “Grand Plats” including Steak Frites with Heston fries and Duck Bordelaise. A new raw bar program will also be introduced, offering fresh seafood like oysters, prawns, Dungeness crab, and mussels escabeche.

In addition to the wine program, Gaia House beverage director Dylan Riches is debuting a new cocktail program with a selection of bistro-inspired creations such as elderflower pastis, truffle martinis, and bourguignon highballs.
As for changes to the space, the Gaia House team shared that the dining room will remain largely unchanged, while the kitchen will undergo a refresh to support the latest phase of the restaurant.

As for Andreas Seppelt, founder of Les Faux, he will remain as part of the front-of-house team.
“For almost 20 years, I’ve spent the majority of my time here and it’s incredibly meaningful to see it continue,” he said. “Yianni, Petro, and the entire Gaia House team understand what makes this place special. I know Les Faux Bourgeois is in very good hands.”
