Pastry chef from three-Michelin-starred restaurant opens bakery in Vancouver

A new bakery has just softly opened on Commercial Drive, and it’s promising to bring some sun to Vancouver. With the rainy season quickly approaching, we couldn’t think of a better time for it to open.

Called Helios, the shop is brought to us by Jennifer Sun-Young Lee, a Culinary Institute of America alum who has experience working at institutions like the iconic three-Michelin-starred Le Bernardin in New York alongside Patisserie Sebastien Gaudard in Paris and Patrice Patissier in Montreal.

“HELIOS has the meaning of ‘Sun’ from Greek mythology, referring to my Korean name ‘Sun-Young’. Most people love Sun-Young more than Jennifer, as it has nice meanings in English. I have been wishing for my shop to have bright, warm and positive vibes like ‘Sun’.
While I was looking for a good name related to ‘Sun’, I found the word ‘HELIOS = SUN’ and decided to give it to my dream shop,” wrote Lee on Instagram.

The bakery had a soft opening on Tuesday, Sept. 22 and is offering a selection of tasty treats like a coffee caramel Financier Cardamom and a Paris-Brest made with Chantilly Azelia, hazelnut praline cremeux, and croustillant.

“See you at the corner of Commercial Drive,” added the bakery on Instagram.

Helios is also open Wednesday, Sept. 23, from 11 a.m. to 3 p.m. After that, an official opening timeline has yet to be shared.
