Two-storey 1,700 sq. ft. taco shop to open in downtown Vancouver

When you think of tacos in Vancouver, one of the first spots to come to people’s minds is La Taqueria, which has been serving up tacos across Metro Vancouver for 16 years. Now, the brand is gearing up to open its new, highly anticipated project: Pinche Taco Shop.

“The new Pinche Taco Shop is so much more than tacos; it’s about celebrating the culture, flavours, and energy of Mexico in a way Vancouver hasn’t seen before,” said Marcelo Ramirez, co-owner of La Taqueria. “We’ve gone back to basics with a focused menu, high-energy atmosphere, and playful approach, all executed with precision.”

The restaurant is two storeys and comes in at 1,700 sq. ft. The space is designed by the award-winning Rafael Santa Ana Architecture Workshop and is inspired by the vibrant palette of iconic Mexican architect Luis Barragán through the playful combination of soft pinks and seafoam green.

On the first floor, you’ll find the main floor and bar, in addition to a patio that overlooks Seymour Street. The second floor will be home to the kitchen, complete with a trompo machine and charcoal broiler. There will also be a patio that overlooks Seymour Street on the first floor.

When it comes to the food, Executive Chef Maria Ponce is serving a menu that’s deeply rooted in tradition. Highlights include appetizers like Taco Gorbenador (Sinaloan-style taco with shrimp and cheese) and Taco Olvidados de Frijol (a simple refried bean taco), and six specialty tacos including Pollo al Carbon (charcoal-grilled chicken), Taco de Lechon (suckling pig taco), Taco de Hongos de Temporada (mushroom taco), Taco de Acelga con Huevo (sauteed chard with garlic and onion and a fried egg), Taco de Papas (potato taco) and its signature Trompo de Picaña (slow-roasted Sirloin rump cap).

Each of these specialty tacos will also be available as a burrita, which is a style of filled and folded flour tortillas traditionally found in Chihuahua and Sonora.

The beverage program, led by Tara Davies (from the Michlin Bib-Gourmand Chupito) and General Manager Denys Bondarenko, follows a similar philosophy as the food menu: precise yet fun offerings that are well executed. Expect Mexican beers, cocktails on tap, rotating frozen margaritas, blended Piña Coladas, and Champaña de la Casa (house champagne).

Similar to taquerias across Mexico, Pinche Taco Shop Seymour aims to embrace the fast-paced, counter-service style shop while also offering guests the option to linger over bites and drinks, meaning you can stop here for a quick power lunch, an afternoon snack, or a leisurely dinner.
