Vancouver is home to plenty of great watering holes where you can enjoy some standout drinks and bites. Now, a new one that is already generating some hype is set to open later this month.

Nomo Nomo is a new Japanese snack bar that specializes in yōshoku cuisine, which Executive Chef Benedict Lim describes as a section of Japanese cuisine that draws significant influence from the Western world.

“It’s almost like the world through a Japanese lens,” he said, adding that he is taking fan-favourite dishes like katsu and tempura and branching out from there.

“Now, hopefully, we branch out in the right way so that we tell a story. We kind of tell the Vancouver version of the evolution of the izakaya,” he added.

Nomo Nomo has been operating pop-ups all across Vancouver, serving a selection of eats inspired by what guests will be able to experience at the restaurant opening later this month.

For example, during its pop-up at Chupito, Nomo Nomo was serving a salmon tostada made with New Zealand King Salmon and truffle aioli, which they flame-seared and topped with soy-cured salmon roe, pickled Serranos, and soy reduction, all on a wonton chip.

However, it’s not just the food that you should get excited about, as guests can also anticipate a selection of curated cocktails, such as the Kuri. Brandy, port, chestnut rice wine, lemon juice, and pear balsamic shrub, along with Hokkaido milk, all combine to create this clarified cocktail.

“This clear cocktail retains flavour with an added roundness and smoothness from the clarification process,” said the restaurant.
