Team behind decade-old Vietnamese restaurant launches new Vancouver concept

The folks behind Linh Cafe (which launched in 2014) have just opened the doors to its latest restaurant, one that aims to celebrate the “soulful essence of Vietnamese street and home cooking.”
Called Linh Noodle Bar, the new space has opened its doors in the former home of Michelin-recommended Bacaro, which closed its doors after five years this March.
On its website, Linh Noodle Bar writes that its menu highlights “fresh, locally sourced ingredients and traditional flavours, thoughtfully reinterpreted with balance, precision, and authenticity.”
“Inspired by generations of family recipes and culinary traditions, we strive to honour the past while embracing modern craftsmanship,” added the restaurant.
As its name implies, noodles are the star of the show. Specifically, pho. Currently, the menu offers a variety of noodle soups, including Pho Ga made with Fraser Valley Loong Kong chicken, rice noodles, clear veal, and chicken broth. Other highlights include the Pho Ga Tron (Vietnamese dry mixed rice noodles with Fraser Valley free-range Loong Kong chicken, fresh herbs, bean sprouts, fried shallots, toasted peanuts, and savoury house sauce) and Pho Tai (clear veal broth with rice noodles and rare Canadian AAA beef).

There is also a selection of share plates. Think green papaya salad, fried tofu, and spring rolls filled with local ground pork, wood ear mushrooms, and glass noodles.
“Linh Noodle Bar was created to bring the spirit of traditional Vietnamese dining into a refined, modern setting,” wrote the restaurant.
“Our goal is not to change Vietnamese food into something unrecognizable. It is to preserve its soul while presenting it with modern craftsmanship, in a room where history, art, food and hospitality come together.”
As for the decor, the space draws inspiration from Indochine art and design, which the new spot describes as a meeting of Vietnamese heritage and French architectural influence. Expect warm wood, rich colours, and plenty of decorative patterns.

Linh Noodle Bar is currently open daily from 11 a.m. to 10 p.m.
