Canada's first plant-based sushi restaurant to open new Vancouver location

In 2022, Cofu Pressed Sushi took Vancouver by storm by being the first plant-based sushi restaurant in all of Canada. Now, the team behind Cofu are gearing up to open something new.

488 Gore Avenue in Vancouver will soon be home to the latest Cofu location. This is the previous spot of Kevin and Kevin, which closed in 2023.

“We’re building something special—just for you,” shared Cofu.

Not much else is known about the new restaurant at this time. However, if it’s anything like its first location, customers can expect to find veggie-forward options like organic red chard, portobello, marinated red radish and raspberry, and eggplant aburi alongside vegan takes on smoked salmon, tuna, and short rib, but swapped out with ingredients like sweet potato and soy.

In addition to announcing the new location, owner Akiko Otsuka shared some kind words about his time at Cofu.

“You, the customers who eat my food with a twinkle in their eyes, are the reason I have been able to stay here to this day. You are my friends, and I am here for you,” said Otsuka. “I am very grateful that you take the time to dine out at my restaurant, especially in Vancouver, where the cost of living is still so high that even eating out is no longer an easy option.”
