Alouette bistro set to open in Vancouver’s Hotel Le Soleil this summer

Vancouver’s Hotel Le Soleil is getting a new concept this summer, a French bistro called Alouette.

A representative from the new Hornby Street eatery told Dished Vancouver patrons can expect a French-meets-West Coast food program complete with comfort foods, French classics, oysters, and fresh salads and mains.

Just like its predecessor Copper Chimney, which closed on November 13, the new restaurant from the Executive Hotels group will offer breakfast, lunch, dinner, and happy hour treats for guests and anyone else who wants to pop in for a bite.

The eatery is just at the beginning stages of its renovations, but we’re told the interior will be a welcoming and approachable space with seating for 80 people.

French-inspired elements like bistro tile, wood, and bright, light colours will be featured as the background to botanicals like palm trees, which will be dotted throughout the space.

When it comes to drinks expect French and local wine alongside a great cocktail and beer program too.

We can expect this lively, non-pretentious concept to open its doors in June, tentatively.
