Canadian shop known for gourmet soft-baked cookies opens first Edmonton location inside major landmark
It’s their first location in Edmonton — and their second location ever!
This July, Great North Cookie Co. announced it’d be opening up its first-ever location within Edmonton, right in West Edmonton Mall.
Great North Cookie Co. is a gourmet soft cookie company based in Spruce Grove. These scrumptious delights are baked daily and offer a cookie pick-up service, delivery, and a wide variety of mouthwatering flavours.
This company started in Canada and is owned and founded by Lilli Thompson.
The U.K.-native owned a successful cake business called Lilli’s Cakes for five years, running a five-star food hygiene rated business at just 15 years old. She gained an apprenticeship in the food industry and gained her chef certification, came to Canada from the U.K. in 2015, and hasn’t looked back since.
Now, she’s an established business owner with two beautiful daughters, as well as two amazing locations for Great North Cookie Co.

On July 24, Great North Cookie Co. opened the doors to their Edmonton location within West Edmonton Mall.
Located on the main floor in Phase Three of the mall, near the Lego Store, sits the new storefront of this wonderful cookie business.
“This journey hasn’t been easy. There have been long days, late nights, and moments of doubt. But through it all, I’ve kept going—not just for me, but for my two little girls,” said Thompson on the West Edmonton location Instagram announcement post. “I want them to see, first hand, that despite hardships, if you pour your heart into something and believe in yourself, dreams really do come true. Every cookie we’ve baked, every smile we’ve shared, every challenge we’ve faced has led us to this moment.”
It’s an exciting time for cookie-lovers in Edmonton, for sure.

For August, their rotating collection consists of the flavours Stuffed Carrot Cake, Milk Chocolate Sea Salt, Lemon Meringue, GN Sugar Cookie, Stuffed Dubai Pistachio, Snickerdoodle, Stuffed Kinder Bueno, Birthday Cake, and London Fog.
“This isn’t just a business move — it’s a celebration of how far we’ve come and the beautiful community we’ve built together,” said Thompson on Instagram. “I can’t wait to welcome you to the new shop and share this next chapter with you!”
