Inside Calgary's new all-day cafe serving up handcrafted waffles

A popular Jasper cafe known for its handcrafted golden waffles has finally made its way to Calgary.
Wafflato Cafe & Lounge has been brought to life by Suhas and Pravila Sawant. While the all-day cafe naturally specializes in waffles, there’s a whole lot more to Wafflato.
From Jasper to Calgary
Wafflato opened its first location in Jasper back in 2020, and over its five years, the spot has lived several lives, contending with everything from Covid lockdowns to wildfires in Jasper.
As such, community has played an important role in Wafflato’s success, Suhas told Dished.
“Nobody knew what Wafflato was… but back in those days, it was the community that stood by us. We got a huge amount of local support.”
After five years, in which Wafflato has served around 200,000 people, Sawant said that 2025 felt like the right time to take the concept to Calgary.
“We want to bring a small piece of the mountains into this beautiful city,” he added.
The restaurant has now opened up inside the old Donna Mac space on the corner of 10th Avenue SW and 9th Street SW.

The Calgary location is much bigger than its Jasper counterpart, Sawant explained, allowing Wafflato to expand its menu with new dishes, including a lounge offering in the evenings with dinner options and cocktails.
What to order
Of course, we had to go and check out Wafflato for ourselves, so we trotted down for a weekday brunch.
While there are plenty of non-waffle options, we couldn’t resist checking out both the sweet and savoury waffles in the name of research.
First up, we tried Wafflato’s fried chicken savoury Belgian waffle. The waffle itself was enormous, taking up most of the plate, and topped with two large, juicy pieces of buttermilk fried chicken, all drizzled with hot honey.

The chicken was perfectly crispy, pairing nicely with the soft and golden waffle, with the hot honey adding just a little hint of sweetness and spice.
According to Sawant, Wafflato’s fruit waffles are a big hit, so we were keen to see what all the hype is about. We got the mixed fruit, again with a golden Belgian waffle, topped with sliced banana, strawberries, blueberries, and a squirt of whipped cream.

While the savoury waffle was delicious, this was a personal favourite.
Wafflato is open seven days a week for everything from breakfast to dinner, so there’s plenty of time to check it out for yourself.
