Billie's Smash Burger pop-up recently launched in Calgary
Billie’s Smash Burger, a new Oklahoma-style joint, recently launched in Calgary.
This burger pop-up is set up by Roy’s Kitchen and operates on Mondays only (for now).
Like all of the best smash burgers, these are made simple and with a variety of toppings and sides. You simply make a reservation to go in on Monday, and you can try the classic with double patty and double cheese or go for one of the weekly features.
Some of the recent feature burgers we’ve seen served out of the Billie’s kitchen?
The McB’s Ribwich was made with pork ribs, hickory BBQ sauce, onions, and pickles on a Martin’s potato roll. There was also a truffle mushroom version topped with summer truffle mayo, white cheese, lettuce, pickle, and onion, and the “Glyeezy” made with spicy chilli, cheese sauce, mustard, and raw and griddled onions.

It might be a pop-up, but it’s already one of the best burger spots in YYC.
Roy’s Kitchen the rest of the week is upscale Korean, and Chef Roy has been introducing this style of food to Calgary since Anju first opened in 2008. Snacks on the menu include Brussels sprouts with double-smoked bacon and soy maple syrup, the famous Korean fried chicken sliders, and some of the best chicken wings in Calgary that come in three different flavours.
