New modern seafood restaurant to open in Vancouver this month — and it's serving waffles with caviar

A new modern seafood restaurant is coming to the heart of downtown Vancouver, and it plans to feature a standout seafood-forward menu featuring items like waffles with caviar.
Osetra Coastal Cuisine, the latest concept from The Key Collection team, will be opening at 410 West Georgia St. this month, which is the former home of Bar Haifa. This is just steps from Rogers Arena, BC Place, and the Queen Elizabeth Theatre.
Here, it promises to offer a refined yet soulful dining experience inspired by the rhythm and beauty of the sea. Expect warm textures, sculpted lighting, and a natural material palette that complements its coastal inspiration.

When it comes to food, Osetra shared that its culinary philosophy is rooted in restraint and respect, doing so by celebrating ingredients for their natural purity and character.
“Every dish begins with integrity,” said Chef de Cuisine Tim Nguyen. “We let flavour speak for itself. Our goal is not to decorate the plate, but to reveal what’s already perfect in nature.”

The menu will include signature items like Red Tuna (tomato dashi gelée, pickled ginger, roasted kombu oil, and citrus emulsion), Octopus (smoked pomme ourée, bravas, gklaze, caramelized onion, and crispy yam), and Ling Cod Torchon (scallop mousse with Osetra and Ikura caviar beurre blanc), in addition to the aforementioned Waffle (caviar on buttermilk and chive waffle with toasted pepper, egg yolk gel, and smoked crème fraîche).
The cocktail and beverage program will be led by Cocktail Director Zoe Bates (Sula, Ellipsis) and Beverage Director Shawn Jones (Coast, Hawksworth, Chambar, Jungle Room) and will mirror Osetra’s culinary philosophy. Guests can anticipate a focused list of cocktails designed around balance, clarity, and modern techniques, in addition to a curated wine selection emphasizing coastal terroirs and refined pairings.

Osetra will open its doors on Nov. 28 and operate daily from 5 p.m. to midnight. In 2026, the restaurant said it will expand its offerings to include lunch and weekend brunch service as well.
