Beloved 18-year-old French bistro to officially reopen in Vancouver next week

After temporarily closing for a quick refresh, the much-loved Fraserhood French bistro Les Faux Bourgeois is preparing to officially open its doors next week.
In case you missed the news, the bistro is now being led by Gaia House, the team behind award-winning Nammos Estiatorio, Selene Aegean Bistro, and AMA.
âWe’re proud of what this refresh represents. It is not just a new look, but a continued
commitment to building on what guests already loved about Les Faux Bourgeois,â said
co-founders and brothers Petro and Yianni Kerasiotis of Gaia House. “From the kitchen to
the floor, our team has poured love into every part of this place. July 8th is a celebration of
the change, but also what came before. We can’t wait for everyone to experience this new
chapter for Les Faux Bourgeois.”
Leading the day-to-day operations is Georgio Yacoub (previously AnnaLena, ELEM, and Burdock and Co.), who is stepping in as general manager. But don’t worry, founder and owner Andreas Seppelt will continue to be involved as part of the front-of-house team.
Co-chefs David Casses and Brent Thornton will be leading the kitchen, breathing new life into the bistro menu. Staples on the menu will remain (with a bit of a refresh), alongside some new additions.

Expect fresh seafood and oysters from the raw bar, including bites like Torched Prawn with spicy Clamato dressing and King Salmon with wild herb sauce.
Petits Plats will include returning favourites like Escargot en Cocotte and Tartare de Boeuf alongside new additions like Oeuf Mayonnaise with trout roe and white anchovy. As for Grand Plats, expect to find Steak Frites with sauce au poivre, Duck Bordelaise with pomme pavÊ, and Moules Frites in a bouillabaisse broth. Longtime fans of the restaurant will also be glad to hear that the French Onion Soup will be returning this winter as a seasonal dish.

When it comes to desserts, Les Faux Bourgeois will be serving Beignets au Pommes with sortilège glaze and a Mousse au Chocolat with poached pear. The restaurant also shared that it is working on a late-night menu expected to launch later in July.
Gaia House beverage director Dylan Riches will continue to oversee the cocktail and wine program with a selection of bistro-inspired creations like Elderflower Pastis, Truffle Martinis, and Bourguignon Highballs.
