Team behind Cowdog launches new micro-bakery in Vancouver

If you’ve tried to visit Cowdog’s Oak Street location in the last week or two, you may have noticed that a new micro-bakery called Kohund has popped up in its place. But don’t worry, your favourite matcha slush and baked goods haven’t gone anywhere, as this is a new concept brought to us by the same Cowdog team we have all grown to love.
Dished reached out to Mariana Weffort, the general manager and head baker at Kohund, to learn all about this new concept.Ā
“You can think of KOHUND as [Cowdog’s] ‘baker sister,'” Weffort wrote in an email. “This gives us the option of possibly wholesaling to other cafes if we decide to explore that direction.”
Wettfort also went on to say that while these are technically two different concepts, there is some overlap in offerings. For instance, you’ll continue to find some Cowdog favourites like pastĆ©is de nata, the Cowdog cookie, cardamom buns, and its popular savoury croissant billow with brie, thyme, shallots, and apple butter.
However, baked goods are definitely the star here, as Kohund is operating with a limited drink program. Namely, drip coffee, iced coffee, or frozen matcha slush (which you can add strawberry puree to).
Kohund also plans to start offering rotating exclusive items, starting with a strawberry matcha tart.
“It’s inspired by Cowdog’s signature matcha drink, transformed into a pastry. The matcha pastry cream has a deep, rich flavour that you don’t often find in bakeries. We achieve that by cooking it at the same ideal temperature used for preparing a great matcha drink,” said Wettfort.

Wettfort also said that future features will focus on fresh, seasonal fruit.
“During peak seasons, we prepare jams, compotes, and ferments so we can carry those flavours throughout the year. Expect rotating features based on what’s in season,” she added.
As for the name, Kohund means “Cowdog” in Danish, which Wettfort said is the style of pastries she and the team take a lot of inspiration from.
You can visit Kohund from Wednesday to Sunday, from 9 a.m. to 2 p.m. or until sold out. As for folks looking to get their Cowdog fix, they can visit its Kitsilano location at 1927 W. 4th Ave., Vancouver.
