Vancouver-based micro-roastery to open first brick-and-mortar with slow bar style of coffee service

Micro coffee roaster Hiyori Coffee has just opened the doors to its first brick-and-mortar.
“After a long season of preparation, Hiyori Coffee is quietly beginning its soft opening,” wrote Hiyori on its Instagram. “There are still a few unfinished details, but we’re finally at the point where we can start sharing coffee in this space.”
The coffee roaster first shared the news in February that they had officially begun the lease for its new space at 279 E. 6th Ave., and that they were awaiting building permits before construction could begin.

“This won’t just be a coffee shop. We are creating a space to experience coffee in a quieter, deeper way. Not only to drink, but to discover how coffee can taste, feel, and stay with you. Every coffee we offer is carefully designed by us — from green selection, roasting, to the final cup,” shared Hiyori at the time.
Now open, the cafe aims to offer a slow bar style of coffee service, aiming to create a space for people to enjoy coffee in a calm and relaxed environment.

The coffee purveyor got its start as a pop-up operating throughout Metro Vancouver. It sources coffee beans in small quantities and frequently changes its variety.
According to its website, Hiyori means favourable conditions of timing for something in Japanese. The name Hiyori Coffee indicates a perfect day for enjoying a cup of coffee. You can also buy beans through its online store.
