Hyatt Regency Vancouver debuts new restaurant highlighting local, seasonal ingredients

A new restaurant inspired by the landscapes and flavours of the Pacific Northwest is coming to Vancouver.
Located in the Hyatt Regency Vancouver at 655 Burrard St., Cloudstreet recently softly opened its doors, with a grand opening scheduled for September.
The restaurant marks a renewed culinary direction for the hotel, featuring a menu rooted in the flavours of the Pacific Northwest with a focus on seasonality, local producers, and what the restaurant calls a “lighter, more expressive approach to hotel dining.”

“Cloudstreet represents a significant investment in the future of Hyatt Regency Vancouver and our dining program,” said Patrick Gosselin, general manager of Hyatt Regency Vancouver. “We’ve created a space that reflects both the energy of downtown Vancouver and the incredible ingredients, producers and culinary talent that define British Columbia.”
The Hyatt Regency Vancouver culinary team is led by Executive Chef Daniel Chiang, with the back-of-house brigade at Cloudstreet being overseen by Chef de Cuisine Craig Sung, who has experience cooking in hotel kitchens in Vancouver and Australia. Most recently, Sung was the Executive Chef at former West End favourite Forage at the Listel Hotel.

“This menu is inspired by the wild beauty and quiet richness of the Pacific Northwest and is a celebration of the summer season at its peak — a time when ingredients are at their most vibrant, expressive and alive with flavour,” said Sung regarding the restaurant’s current menu called Summer Terroir. “We work closely with exceptional local producers and growers who share our commitment to quality, sustainability and craft. Every ingredient is thoughtfully sourced, reflecting a deep respect for the land, waters and rhythms of the season. The result is a menu that feels both refined, effortless, fresh, layered and quietly indulgent.”
As for the space, it has been dramatically redesigned, featuring an interior anchored by floor-to-ceiling windows overlooking downtown Vancouver.

Currently, the restaurant is open for breakfast from 6:30 to 11 a.m., lunch from 11:30 a.m. to 2 p.m., and dinner from 5 to 9 p.m.
