New bakery taking over shuttered Toronto donut shop this fall

A new bakery will soon be opening in the space that one of Toronto’s favourite donut shops once called home.

It’s only been two weeks since beloved Toronto donut shop, Glory Hole Doughnuts, closed its Gerrard East location (subsequently, the business as a whole) down for good, but there’s already a new business preparing to move in.

Sure, the body’s hardly even cold at this point, the community is still grieving the loss of its cherished innuendo-rich donut shop, but we have to admit, we’re pretty excited for what’s coming next.

What exactly is coming next, you’re almost certainly asking? Jupiter Bakehouse, the new brick-and-mortar home for a farmers market staple created by local chef and baker Jackson Forster.

The backbone of Jupiter Bakehouse, Forster tells Dished Toronto, is showcasing Canadian grain and produce through fermented sourdough bread and traditional French pastry.

Think crunchy-crusted, chewy-centred baguettes, viennoiserie, tarts filled with seasonal, local produce, entremet cakes, and cookies, all paired perfectly with coffee drinks brewed from locally roasted beans.

“Two years ago, Jupiter began by selling at various farmers’ markets across the city and got a fantastic customer reaction,” Forster tells Dished Toronto. “People are very interested in our use of local flours and the artisanal baking methods of our breads.”

Forster’s culinary background began when he worked as a cook and later pastry chef at various French restaurants, ultimately discovering his love for breadmaking and moving on to the likes of Petite Thuet and Blackbird Baking, before deciding to open his own operation.

The ultimate goal with Jupiter, Forster tells Dished Toronto, is to assemble “a small highly skilled team that can focus on creativity and strive to showcase beautiful products we have here in Ontario,” and that’s precisely what he’s set out to do.

A little over a year after launching, Forster and his team began searching for the perfect location to build a permanent home for the bakeshop.

It took 18 months before they discovered the former Glory Hole Doughnuts space, and all the pieces — or, ingredients, if you prefer — came together perfectly.

Forster himself happens to be an East End resident and a big fan of the way that the area immediately surrounding the future bakeshop has been growing into a local culinary destination in its own right. Jupiter Bakehouse, he believes, will be a perfect fit.

“Gerrard and Coxwell is shaping up to be a culinary stop where you’ll be able to get fresh bread, beer, cheese, meats and try amazing restaurants, and we’re so excited to be taking part in it,” he tells Dished Toronto.

The vision for the bakery is to be a warm, welcoming spot that matches the “cool, friendly” vibe of the neighbourhood, Forster tells Dished Toronto. Oh, and to serve next-level baked goods, of course, but that goes without saying.

At present, the space is undergoing some major renovations to transform into the bakeshop of Forster’s dreams, so the opening date has yet to be firmed down, but, according to the bakery’s Instagram bio, it could be opening as early as October 2025.

“[We] will be posting lots of updates on Instagram so people can follow our progress,” Forster adds.

After all, just like any good sourdough starter, perfection takes time.
