What to eat in and around Seattle today: U:Don

The gloomy weather calls for a perfect bowl of soup, and U:Don has just the one for you.

This Japanese noodle station offers up fresh, handmade Sanuki-style udon noodles, which will transport you across the world and into an authentic udon shop in Japan.

All noodles and accompanying soups and sauces are made from scratch using traditional procedures and techniques, with all-natural ingredients.

When ordering, decide first if you’d like chilled or hot udon, if you’d prefer a sauce or soup style dish, and whether or not you’d like to make substitutions to create a vegan or gluten-free dish.

The spot has 20 different udons to pick from, consisting of both noodles in soup, as well as dipping udon.

You can also enjoy one of two rice bowls, a beef and rice bowl or a dashizuke bowl with steamed rice, rice crackers, nori seaweed, and dashi.
