What to eat in and around Seattle today: HaiDiLao HotPot

You may have had hot pot before, but you haven’t had it like they make it at HaiDiLao Hot Pot.
The new Pacific Place eatery offers a modern take on traditional Sichuan-style hot pot dining, also known as Shabu Shabu.
You’ll be able to choose from a variety of in-house made broths and dipping sauces, handmade noodles and additional ingredients including organic vegetables and a range of proteins such as beef, lamb, chicken, and seafood.

Start your meal by selecting a broth base. HaiDiLao has spicy bases, vegetarian bases, as well as un-plain, regular bases. If you’re undecided on which may be best for you, guests can pick up to four.

Next, decide whether you’d like to order a combo or select items a la carte.
The spot has multiple meats, including Wagyu beef, kobe beef belly, colorado lamb shoulder, organic chicken breast, and seafood.

Those feeling adventurous can order beef aorta, shrimp paste, braised pork intestine, pork brain, duck blood, or assorted mashed meat — we promise, they all taste great.

The spot is currently offering both takeout and dine-in service from 4 to 8 pm daily, however, a reservation is highly recommended.
