Montreal charcutier Phillip Viens has found a permanent home.

The former chef de cuisine at Maison Publique and artisan maker of porchetta, Italian salami, and terrines has been poping-up at markets and supplying to some the city’s most acclaimed restaurants (Toqué, Loïc among them) in recent years.

As of this week, a new retail operation outfitted with little more than a deli counter is open to the public and can be found selling a revolving selection of necessities for DIY charcuterie boards along with premium cold cut sandwiches from a storefront on St-Laurent just north of Mont Royal.
