A 100-day pop-up restaurant with tacos and Paletas is opening in Calgary next month

A new pop-up restaurant concept is opening its doors in Calgary next month, and this time, it’s turning to Mexico for inspiration.
With the closure of Sensei Bar earlier this year, summer saw the space transformed into a pop-up, Oori Nori, a 100-day concept focused on Japanese hand rolls. Now, we finally have word of what’s next for the location.
Los Taqueros, an exclusive taqueria experience, will be opening its doors on Oct. 4, running for 100 nights.
Paying homage to Mexico’s vibrant street taquero culture, Los Taqueros boast a menu of authentic tacos, craft cocktails and ice cream bars.
“This is not just another taco joint, it’s a culinary celebration, crafted for food lovers, mezcal aficionados, date-night seekers, and anyone hungry for something new and unforgettable,” the team said.
Focusing on classic flavours, expect to see barbacoa, al pastor, birria and cochinita hand-pressed tacos, with sides such as guacamole, tortitas de papas and quesadillas. For dessert, the spot will be serving up Paleta, a Mexican ice cream bar, with a range of dips and fresh toppings.
Meanwhile, the mezcal and tequila-forward cocktail list will showcase creations such as craft margaritas and carajillos, as well as Mexican beers and Jarritos.
Los Taqueros will be open Wednesday through Sunday, from 4:30 to 10 p.m., until mid-February.
