With all these amazing food trucks coming into the scene every week, Vancouverites have no excuses to not have a fantastic lunch everyday. There are so many tantalizing options, and today, I bring to you another one.
Vikram Vij’s new venture, the Vij’s Railway Express, will take you on a culinary journey thru India. Every week, your taste buds can feast on the traditional dishes of Delhi, Bombay and Calcutta only to name a few.
You can taste Mr. Vij’s passion for the foods of his homeland in every bite, each dish is top notch, offering fresh ingredients and traditional seasonings. This is a must try food truck this summer.
VcB : What’s the name of your mobile restaurant?
Vikram: VIJ’S RAILWAY EXPRESS
VcB: What type of food do you offer & what does your mobile restaurant offer the food cart community?
Vikram: Our Mobile Restaurant features unique foods inspired by (Chef Vikram Vij’s) railway travels through India. Our menu will change regularly as Vij’s Railway Express visits various railway “stations” of India, honouring the flavours, ingredients, curries, produce, colours and dishes of various regions of India!
Vij’s Railway Express seeks to offer more than just tasty food, we’re passionate about bringing local/sustainable/healthy food to our customers while providing them with a memorable experience; sights, sounds, smells, and a little a sense of India’s rich culinary landscape…by rail!
VcB: Where are you typically located?

VcB: Someone has $15 to spend for lunch. What should they order?
Vikram: Very tough decision…depends on the mood, weather, and overall preferences. We’re working on a mixed-plate option that will enable visitors to avoid choosing and have a taste of several items for $15!
VcB: In the future, what foods do you hope to offer?
Vikram: Our team is truly inspired by the theme of railway food of India…the variety of deliciousness is endless and we’re eager to explore ALL culinary regions of India; adding the Vij’s signature to each of our interpretations. With a focus on the abundance of BC’s seasonal produce, fish, and meat resources, our menus will reflect Indian flavours with local resources. We couldn’t be more excited!
