'Top Chef Canada' winner Chanthy Yen's highly anticipated restaurant is opening in Vancouver this week

After announcing the concept back in August, Top Chef Canada winner Chanthy Yen has revealed the opening day for his highly anticipated restaurant, Touk.

Touk, meaning “boat” in Khmer, labels itself as a first-of-its-kind culinary experience in Canada, aiming to combine the flavours and rich heritage of Cambodia with Yen’s personal storytelling.

“Creating TOUK has been a very personal journey for me. It’s a chance to honour the food I grew up with while expressing how my cooking has evolved over the years. My hope is that Vancouver will connect with Cambodian cuisine in a way that feels both fresh and deeply familiar,” said Yen.

Guests can expect a menu that celebrates Cambodia’s depth and diversity through dishes like Babor (a rice porridge layered with snow crab, egg yolk, and Kampot pepper foam); Twa Koh (grilled beef sausage seasoned with galangal and roasted rice) and Yen’s Top Chef Canada-winning dish: Pan-roasted Wild Boar Tomahawk with Cambodian Mole.

There will also be refined interpretations of French-influenced menu items like Coquilles Mee Katang (East Coast scallops with wide noodles, cream, and sea urchin butter) and Magret de Canard with prahok pistou.

When it comes to the culinary program, award-winning bartender Tara Davies is drawing inspiration from the spices and aromatics essential to Southeast Asian cooking.

Each drink is meant to represent flavours from different regions of Cambodia. There will also be a thoughtful wine list curated by Jayton Paul and Virginie Semery, which will feature standout French selections, notable B.C. wines, and picks from celebrated global regions.

Touk officially opens its doors on Dec. 19. Limited tables will be available on a first-come-first-served basis from Dec. 19 to 21, and reservations can be made for Dec. 26 onwards.

Plus, folks who are looking for New Year’s plans are in luck as Touk is offering a special 5-course New Year’s Eve dinner on Dec. 31, with multiple seatings available beginning at 5 p.m. (though guests joining the 10 p.m. seating will receive complementary passed canapes and a glass of bubbles for the midnight toast).
