Vancouver’s new destination for late-night eats and cocktails, Straight and Marrow, is slated to open its doors this week.

The highly anticipated eatery is brought to us by industry vet Chef Christopher Lam, and it’s located at 1869 Powell Street in the former location of Bistro Wagon Rouge, which closed in Fall 2019.

Focusing on nose-to-tail eats, diners can expect a menu full of unusual cuts of meat and offal alongside a delightful cocktail program from the mind of Bar Manager Chad Rivard.

The intimate eatery boasts highlights such as Lamb Sweet Breads, Beef Heart Tartare, and Uni Gnocchi.

“My vision for Straight and Marrow is to provide a casual, affordable experience that doesn’t sacrifice on quality,” says Lam.

“When it comes to meat, many parts of the animal are often overlooked or seen as waste. I want to show Vancouver diners that these cuts – when treated with the proper care and respect – can be quite delicious.”
