Spotlight on the Okanagan at next Guest Chef Market Dinner at Edible Canada

As part of their Guest Chef Market Dinners, Edible Canada will welcome Chefs Adair Scott of Watermark Beach Resort and Derek Uhlemann of Covert Farms on Wednesday, April 15 for a “farm-to-beach” meal at their Granville Island restaurant.

With a goal of bringing some of B.C.’s best-kept culinary secrets to the table in the heart of Vancouver, the Guest Chef Market Dinners at Edible Canada are focused on incredible ingredients prepared by some of the region’s top kitchen talent.

The showcase ingredient Scott is bringing is a new, sustainable canned sockeye salmon, “Okanagan Select.” This Ocean Wise-certified salmon comes from the Okanagan River.

“This salmon is pretty unique,” says Edible Canada’s President and Executive Chef Eric Pateman. The salmon is produced by the Okanagan Nation Alliance, and partial proceeds of the salmon go towards conservation efforts in the Okanagan River. The salmon will be included in a potted salmon starter on the four-course menu.

“Everything that we’re doing is about storytelling,” explains Pateman,who is excited that their restaurant has the opportunity to shed light on some of the marvellous ingredients coming out of the Okanagan, as well as to pair Scott’s food with the carefully-selected Covert Farms wines.

Pateman is also pleased to be working with Watermark, who he says is doing much to make Osoyoos a terrific year-round destination.
