Sebastian & Co has officially opened its doors in Vancouver

Downtown Vancouver just got a whole lot meatier, as Sebastian & Co has officially opened its highly anticipated 1299 Howe Street location.

The old-world butcher shop has been two years in the making. After some delays, it’s finally ready to welcome customers inside to enjoy its curated selection of high quality meats, house rubs, and ready-to-eat offerings like sandwiches and charcuterie.

Founded by former chef-turned-butcher Sebastian Cortez, Sebastian & Co is inspired by artisan butcher shops like the ones you’d find in Europe.

This new destination is Sebastian & Co’s second outpost. The brand has one other location in West Vancouver, which opened in 2007.

The brand is known for offering customers Frenched racks of lamb, tied standing rib roasts, and dry-aged steaks — not to mention some amazing small-batch artisan products, which are all designed or developed by Cortez and his team.

We’re talking everything from Fois Gras Parfait to Cold-Pressed Olive Oil, to the famed Asado-inspired Charcoal Rub.

Some of these products can be ordered online as well if you can’t wait for your trip to the shop.

In addition to an impressive selection of pantry staples and imported meats, patrons can expect to have the option for custom cuts upon request.

This brings us to one of the new shop’s biggest highlights: the Custom Dry Aging Room.

The team tells Dished Vancouver this room is the very first of its kind in Canada.

It offers customers the ability to pre-purchase custom dry hanging loins and ribs, which will then be tagged with their name, the date, and the desired length of dry-age time.

People can come into the shop and request certain cuts from their dry-aged meat after that.

Think of it as a liquor locker at a restaurant but for beautiful cuts of meat at a butcher shop.

Other notable features of the space include a broth bar where folks can get a cup of beef or chicken broth to-go, charcuterie to-go complete with pickles and aged cheese (cones and boxes), and a floor-to-ceiling charcuterie cooler too.

This window-facing cooler showcases the finest imported charcuterie such as Spanish Jamón Ibérico and Italian prosciuttos.

Of course, we can’t skip over the incredible sausage rolls, empanadas, and craft sandwiches made in-house daily like the Ruben, the Jamon Con Queso, and Chilean Chacarero sandwich.

Clearly, there’s a lot to make, taste, and enjoy at Sebastian & Co.

You’ll find Cortez or his knowledgeable team behind the counter to help you get the lay of the land once you stop by.

A word of advice? Go hungry, as we truly don’t know anyone who could pass these picture-perfect charcuterie cones on the way out…just sayin’.
