Team behind Suyo and Uchu launch delivery-only Peruvian chicken concept in Vancouver
Chef and owner Ricardo Valverde, also known as the brain behind Vancouver’s award-winning Suyo Modern Peruvian and the seafood-centric sister restaurant Uchu Cevicheria and Raw Bar, is broadening his horizons with the launch of a new delivery-only concept titled Rico Chicken.
The team shared that Rico will bring Valverde’s ingredient-driven approach to the world’s most beloved protein: chicken. Every certified organic chicken is sourced from Windberry Farms in Abbotsford, is marinated for 24 hours in a yogurt and blend of spices, brushed with Rico’s signature anticuchero sauce (a savoury, smoky Peruvian marinade), and then roasted at a high temperature. This results in a juicy chicken with a deliciously charred exterior.

The menu centres around half and whole chickens served alongside a variety of house-made sides, including sweet and buttery Peruvian cornbread, garlic rice, chimichurri fingerling potatoes, and made-to-order cucumber, tomato, and avocado salads.
Sauces will also be available, like creamy Aji Pollero, Tapenade Aioli, Fuego Baby hot sauce, and Rico Gravy made from slow-roasted chicken bones and aromatic herbs.
Rico also serves a variety of other popular Peruvian fare like Arooz con Pato, Pork Belly ChicharrĆ³n, and Lomo Saltado, as well as house-made desserts and traditional beverages.

“We’ve always enjoyed introducing people to different sides of Peruvian cuisine at SUYO and UCHU,” said Valverde. “With RICO, we’re giving our attention to a comfort classic. Our chicken and sides are simple, honest, and crafted with the same attention to detail that defines everything we do.”
Rico Chicken is available for delivery Tuesday through Thursday from noon to 9:30 p.m. throughout Metro Vancouver via third-party apps Uber Eats, DoorDash, and SkipTheDishes. Pre-orders for corporate catering and group orders are also available.
