Recipe: Drool-worthy blueberry pancakes you can make in your PJs

Pancake Pops/Western Family

Blueberry Pancake Pops

Ingredients

  • 1/2 cup Western Family All-Purpose Flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 3/4 cup milk
  • 2 tbsp butter, melted
  • 1 cup Western Family Frozen Blueberries
  • 14 lolly sticks

Instructions

1. Heat griddle and set aside.
2. Combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl. Whisk together.
3. In another bowl, beat the egg, milk and melted butter together.
4. Scoop out a tablespoon of pancake batter onto hot griddle.
5. Let the pancake set for about a minute and then add the lolly stick in the batter. Make sure it is close to the top of the pancake.
6. Use your spoon to press the stick down into the batter and smooth out the batter, so there isn’t a crease.
7. Scatter some blueberries throughout the pop.
8. Space out the rest of the pancake pops on the griddle. You want to have enough room for the sticks and to flip them over.
9. Cook for about 4-5 minutes on the first side. Then, using a small spatula, flip over once you see bubbles in the batter or it starts to dry out. Cook for another 3 minutes on the other side.
10.  Serve with maple syrup.
