3 colourful cocktails to shake up for Pride weekend (RECIPES)

For me, Pride Week in Vancouver is a celebration of life, love and equality. The countless Pride festivities culminate this weekend with the 37th Annual Vancouver Pride Parade — one of Vancouver’s flagship events attracting crowds of more than 650,000.

Continue the celebrations this weekend by hosting a post-parade party, complete with some colourful and creative cocktails. Here are three Pride-themed cocktails that will leave your guests feeling loud and proud all weekend long.

1. Davie Collins

This cocktail is a simple and colourful twist on the classic Tom Collins, best described as sweet, delicious and loaded with bubbles.

Ingredients

  • Rainbow Ice Cubes*
  • 1.0 oz Absolut Vodka
  • 0.5 oz Giffard Peach Liqueur
  • 0.5 oz Simple Syrup
  • 1.0 oz Lime Juice
  • 3.0 oz Sparkling Wine
  • Orange, Lime and Lemon zest to garnish

*Rainbow Ice Cubes:

Fill 6 ice cube trays with water, and add a few drops of purple, blue, green, yellow, orange and red food colouring (to your desired colour strength) in each tray.

Method

In a collins glass, layer the ice cubes beginning with purple, blue, green, yellow, orange and then red. In a Boston shaker, combine the vodka, peach liqueur, lime juice and simple syrup. Shake vigorously for 10 seconds and pour over the rainbow ice cubes. Top with sparkling wine, and garnish with citrus spirals.

2. Lost Lagoon

The ‘Lost Lagoon’ is my colourful take on the ‘Blue Lagoon’, a popular summertime favourite. Named after Vancouver’s land-locked body of water at the south end of Stanley Park — home to the beautiful Jubilee Fountain — this cocktail is a tribute to our wonderful and diverse city.

Ingredients:

  • 1.5 oz Kaffir Lime Vodka*
  • 0.5 oz Blue Curacao
  • 2 oz Green Tea
  • 1 oz Lemon Juice
  • 0.75 Honey Water (1 part honey to 1 part water)
  • 3 dashes Bittered Sling Grapefruit & Hops Bitters
  • 1 Pineapple Slice for garnish

*Kaffir Lime Vodka:

Place 10 kaffir lime leaves in a bottle of vodka, and shake. Let rest for 4 hours. Leaves will not need to be removed (flavour will only intensify over time).

Method:

Shake all ingredients in a cocktail shaker with ice, and pour over fresh ice in a 12 oz glass. Garnish with a slice of pineapple.

3. Zhush

Named after a slang term meaning “to glamourize, primp or fluff up”, this seemingly delicate cocktail packs a big punch. There’s no better way to “zhush” up your Pride Weekend!

Ingredients:

  • 1.5 oz Broker’s Gin
  • 0.25 oz Okanagan Spirits Haskap Liqueur
  • 0.25 oz Domaine de Canton Ginger Liqueur
  • 0.5 oz Orgeat Syrup
  • 0.75 oz Lime Juice
  • 0.75 oz Pasteurized Egg Whites
  • Bittered Sling Denman Bitters
  • Edible Flowers

Method:

Add all ingredients, except the bitters, to a Boston shaker and add ice. Shake vigorously for 15 seconds. Strain over fresh ice in an old fashioned glass. Mist with Denman bitters. Garnish with edible flowers
