We’ve all seen the ‘Pinterest Fails’ posts around the web, and even on Pinterest. But where are the Pinterest wins? This series will share some Pinterest recipe wins that I have personally tested and enjoyed.
The first Pinterest recipe win is the Peanut Butter Banana Oatmeal Cookie. Here is the original pin that inspired me to get off the couch and give it a try. I’ve tweaked it a bit to satisfy my freakish need to add chia seeds to everything.
Ingredients
2 – 3 ripe bananas
1/2 – 1 cup peanut butter (or other nut butter)
1 tablespoon vanilla extract
2 tablespoons blue agave syrup (or honey)
1/2 cup all-purpose flour (or almond flour)
2 cups oats
1 teaspoon baking powder
1/2 cup semi-sweet chocolate chips
3 tablespoons chia seeds (optional)
Directions
Preheat oven to 350 degrees F.
Combine bananas, vanilla, peanut butter and blue agave syrup.
Mix until it is a smooth consistency.
Add dry ingredients until well combined.
Add chocolate chips and chia seeds.
The batter will be sticky. I recommend using an ice cream scoop, or two tablespoons, to help you drop them on the cookie sheet instead of trying to wrangle the batter off with your fingers. I used a non-stick silpat, but if you don’t have one, you can grease the cookie sheet with butter, or use parchment paper. The cookies don’t spread, so they can be placed close together. Each cookie has about one tablespoon of batter.
Bake for 15 minutes.
