Pallet Coffee Roasters to open new brunch spot "Palate Kitchen" in Vancouver

Brunch is one of Vancouver’s all-time favourite things.

We have places in every corner of the city dedicated to bringing us the best of the best when it comes to eggs, bacon, avocado toast, and pretty much just the whole mid-morning shebang in general.

The downtown core can be a tricky place to find a seat when you’re after a killer upscale brunch, but a big new addition to the area’s breakfast and coffee scene is going to change that.

The 848 W Hastings Street eatery is brought to us by the same team as Pallet Coffee Roasters, a Vancouver-based Third Wave Coffee producer with six cafes in town (including a new HQ location in Railtown).

The stunning new brunch spot is housed in a Georgian Revival Style heritage building, Jameson House, which is just steps away from new-ish eateries like Greek joint Hydra and cocktail destination Open Outcry.

The 4,500-sq-ft space features high, glass ceilings, and two upper-level dining areas on either side.

There’s seating for around 88 people here, which means there’s ample room to sit down for a breakfast, brunch, lunch, or coffee date.

If you don’t have time to settle in, there’s a front of house coffee bar offering drinks to go, which will be serving Pallet Coffee’s high-quality caffeinated beverages and treats like gourmet pastries and sandwiches.

The interior of the space is bright, clean, and features pops of blue and green. The Palate team mentioned that art and greenery will be added to the space this week as well.

The name of the game here is elevated (yet affordable) brunch and specialty coffee.

The menu has all the classics and then some, like the Palate Burger topped with a fried egg and a suped-up avocado toast piled high with mixed green on fresh sourdough.

On the sweet side, you can’t miss ordering the Mascarpone Skillet Hot Cake. This dish features maple syrup, seasonal berries, and mixed seeds. It comes out piping hot and is like eating one mega pancake — we’re totally into it.

Other highlights we saw were the Taktouka Skillet for $12, one of several Mediterranean-inspired dishes up for order here.

While they aren’t licenced just yet — in the near future they will be offering boozy brunch drinks such as mimosas, Caesars, and an Espresso Martini.

Once it opens, Palate will be operating Monday to Friday from 8 am to 3 pm and weekends from 9 am to 4 pm.

You can find the front of house coffee bar open Monday to Friday from 7 am to 5 pm.

Palate Kitchen is gearing up to tentatively open to the public on February 6.
