Team behind popular Vancouver pasta bar to open new restaurant specializing in Roman-style pizza

We’ve seen it before: one restaurant closes and another opens in its place. However, rarely does a restaurant open just a week after one closes. This is the case for the new restaurant coming to the former space of Gusto in Olympic Village — and we’ve got all the deets ahead of its opening.
Gusto, which opened in 2019, was best known for its range of Italian eats and its giant spinning wheel of desserts. Offerings included its selection of traditional Roman-style pizza called scrocchiarella alongside a variety of antipasti and caffeinated beverages, too.
The restaurant’s final day of service was Aug. 17.

The new spot opening in the former Gusto is brought to us from the team behind the much-loved Casereccio, and it’ll be opening sooner than you think.
Casereccio, a pasta bar located in Kitsilano, grew in popularity for its homemade and authentic Italian offerings. Think classics like carbonara, bolognese, lasagna, risotto, and much more.
Instead of opening a second Casereccio location, the team has decided to launch a new concept at the former Gusto.
Called Onda, this location will specialize in what the team will be calling pizza, but explained to Dished that it’s technically something different instead.
“Our main focus will be pizza: still Roman style (crunchy, airy, 90% hydration), but closer to what’s currently booming in Italy — pinsa romana,” said Simone Tarallo, co-owner of Casereccio and Onda. “It’s a lighter dough, served in a rectangular shape. For the North American market, we’ll continue to call it pizza, but with this unique twist.”

By day, Onda will have more of a bistro or coffee shop feel, where guests order at the counter and can enjoy table service, similar to Casereccio. But in the evening, the space will offer full dinner service with servers, bartenders, and a cocktail menu full of personality.
Onda is expected to open its doors soon, so be sure to check back here for an opening date.
