Off The Menu: Chef Angus an of Maenam Thai Restaurant (VIDEO)

In this episode of Off The Menu, we head to Maenam restaurant in Kitsilano, where we meet with Chef Angus An and talk about the restaurant, their food and some of the pranks he and his fellow chefs have pulled on each other.

Then we take a look behind the kitchen doors where Chef An makes us a Lobster Miang, a Thai street food inspired dish not regularly available at Maenam that you can ask for the next time you’re there – although you might want to call ahead to make sure they have a lobster with your name on it.

This dish is among the best things I’ve eaten in Vancouver. Layer upon layer of different flavours and textures. It’s got everything covered. The lightly poached, sweet lobster with lime (sour), toasted coconut (sweet, crunchy), bird’s eye chilli (spicy), cane sugar (sweet), tamarind (sour, citrus), and a bunch of other ingredients that Chef An shows us in the video, all wrapped in bittersweet betel leaves
