Macaron or macaroon? Don’t mistake a French macaron for a macaroon, which is a chewy coconut treat! Macarons are the colourful cookie sandwiches that can be found almost anywhere in France. Now, they are a growing trend in Vancouver. Faubourg is one location that offers those decadent sweets.Once you enter the cafe, an eye catching display of macarons is the first thing to be noticed. An individual macaron costs $1.79. One can purchase a small box of macarons- 8 for $14, 10 for $17.50, or 12 for $21. Larger boxes of macarons are priced at 15 for $26, 18 for $31, or 20 for $34.50.
The small box is rectangular box, with a tab to pull the macarons out conveniently. These boxes also have the nutrition information printer on the back. One macaron weighs 12g and packs 70 calories!

The buttercream fillings were creamy and moist.The Faubourg signature, white chocolate and passionfruit, was a bit on the sweet side. However, for someone who did not like white chocolate, the signature was quite enjoyable. The caramelized pineapple tasted like candy. The lemon and cassis (blackcurrant) macarons were fruity and moist. The raspberry dominated the raspberry rose macaron, and I couldn’t taste much rose.
The dark chocolate macaron was exactly as I expected dark chocolate to be – rich with a bittersweet edge. There is supposedly a hint of licorice, but I didn’t taste it. A must try for dark chocolate lovers.
The size of the macarons were moderately small. Each macaron was fairly uniform in size and the shells were aligned. The macaron shells were smooth and easily stackable. However, some of the shells were hollow. When I bit into it, it crumbled!
Faubourg’s macarons were fairly consistent in texture and taste, although the shells were a bit fragile. I prefer the simple fruity flavours because they are less sweet. Some of their macarons change from time to time, so check out their website to see what Faubourg is currently offering. Near the end of the day, certain macarons could be sold out! I recommend going their early if you want to try a specific flavour!
