New Vancouver bakery is serving Indian-inspired croissants

A new bakery named Elaichi Patisserie has opened in Vancouver, and it’s serving a variety of unique baked goods, including Indian-inspired croissants.
The new bakery is owned by Vinaya Waghmode, who describes the shop as a “delightful fusion of French techniques and vibrant flavours of Mumbai, India.”
“‘Elaichi’ means cardamom in Hindi â a spice deeply rooted in Indian cuisine, found in both sweet and savoury dishes like curries and biryanis. For me, cardamom evokes joyful memories of my hometown, Mumbai. While I’ve always cherished the vibrant flavours of Indian spices, I found many traditional pastries overly sweet for my palate,” wrote Waghmode on Elaichi’s website.
“This inspired me to study culinary arts in France, where I focused on mastering pastry techniques. Today, Elaichi is the fusion of refined French methods and bold Indian spices, resulting in pastries that are beautifully balanced and truly memorable.”

While the bakery’s brick-and-mortar space may be new, Elaichi is no stranger to the local food scene, having operated at Granville Island Market Flavours of Hope cafe and farmers markets across Vancouver.
Highlights from the menu include a Samosa Croissant, consisting of soft potatoes, peas and sweet and spicy chutney, all wrapped inside a flaky croissant. Other options include a Pear and Chai Masala Cinnamon Croissant, Pistachio Saffron Cake, Herb Chutney Cheese Croissant, and many more.
“At Elaichi, every pastry tells a storyâa celebration of heritage, artistry, and community. Inspired by the vibrant streets of Mumbai, we bring the bold flavours and aromatic spices of India to every bite, honouring traditions and our culture,” added Waghmode.
Currently, Elaichi is operating Thursday to Sunday from 9 a.m. to 3 p.m., or until sold out.
