A cross between a diner burger and a fast-food burger, it’s worth every bit of sauce that spills on your shirt.
Dublin Calling chef and creator of the smash burger, Jonathan MacDonald, tells Daily Hive the burger offers the best of both worlds. He says each component has its purpose, and the bun is truly noteworthy.
“The soft but chewy texture of the bun not only holds up flavours but holds the patty, the sauce, and lettuce intact so that every bite is the same,” explains MacDonald. “The thousand island sauce is salty, sweet, and sour, which gives you that umami profile.”
Layers of iceberg lettuce offer a crunchy and fresh texture. Meanwhile, the burger patty is cooked on high heat until it’s crispy, caramelized, and almost crumbly. “Together it makes a tasty burger that doesn’t fall apart.”
MacDonald says he always had a deep connection to food and cooking, and his family culture also influenced him. “Being a chef wasn’t necessarily always what I wanted to do, but as I got older, I felt a constant pull to the food industry.”
There are many chefs around the world that MacDonald admires, but he’s particularly impressed by David Chang and his voice for change in the industry. “I admire him for his ability to speak his mind regardless of how controversial his takes are.”
Dublin Calling stresses the importance of hygiene in the kitchen and taking extra precautions during the ongoing crisis.
The culinary team is using the appropriate PPE (personal protective equipment) and maintaining a safe distance from others inside and outside of the business. MacDonald says these practices are something the team took seriously before, and they continue to do so.
“For me, as a chef, cleanliness is paramount,” he says. “With COVID-19, we are taking extra precautions to maintain a high standard of cleanliness and personal hygiene.”

The Dublin Calling chef’s favourite way to spend time right now is relaxing with a cold beer. “Sitting on my patio in the sun, or in the living room, and enjoying a cold one is all I need,” MacDonald says.
