Chocolate & peanut butter banana bites - recipe

The sun has finally come out for us Vancouverites! If the heat is making you crave a light & refreshing dessert option, I’ve got something in mind for you. I call them Chocolate- Peanut Butter Banana Bites. These sinful bite-sized morsels are the perfect dessert option for a summer day.  Best part about them? They are so simple to make. Trust me–the freezer does most of the work.  

Frozen Chocolate-Banana Bites

(Makes about 12 bites)

2 large bananas

1/4 cup chocolate chips

1/4 cup smooth peanut butter

Unsweetened coconut flakes

Directions:

1. Line a cookie sheet with parchment paper or aluminum foil. 2. Cut up the bananas into good sized pieces. Each banana should yield you around 5-6 pieces.

3. Using a double broiler, melt the chocolate chips. Add in the peanut butter once melted & stir until smooth

4. Dip each banana piece in the chocolate-goodness mixture. Lay evenly on the cookie sheet.

5. Sprinkle with coconut flakes & transfer to the freezer for 2 hours. Enjoy life.
