Vancouver's new listening bar is meant for slowing down

A new listening bar called Amber has quietly opened its doors in Vancouver, and it’s encouraging folks to slow down and stay a while.

The restaurant is inspired by the Japanese kissa lounge tradition, featuring an intimate space that the restaurant says “invites you to slow down, listen deeply, and savour a thoughtfully crafted Pacific Northwest menu.” The restaurant also shared that it will only be spinning vinyl, played on vintage hifi to create that warm and rounded sound worth listening to closely.

“Whether you’re here for food, the music or simply the atmosphere, Amber offers something rare: a place where every detail, from the plate to playlist, is intentional,” wrote the restaurant.

As for the menu, you can find plenty of bites cooked up by Chef Ryan Mills. Think small plates like Sablefish served with pea veloutè, charred scallions, foraged morels, and pickled sea asparagus, or “Chicken Fried” Spot Prawns with meyer lemon aioli, in addition to more substantial options like Steamed Mussels with spring garlic and coconut broth and Ricotta Gnudi with corn cream, bacon, morels, and Pecorino Romano.

There’s also a selection of house cocktails to enjoy, including the Barbados (House grapefruit cordial, Patrón Silver, Tanqueray Sevilla, and fresh lemon juice) and Pepi (Hendrick’s, cucumber juice, jalapeño syrup, Ancho Reyes, and celery juice topped with jalapeño wine and garnished with an oyster).

Amber Listening Bar is open daily, with a brunch program available on weekends starting at 10 a.m.
