Toronto about to get a massive new vegan Mexican restaurant

The people behind all the restaurants you already love are teaming up to open a massive new vegan Mexican restaurant in Toronto’s Financial District.

The folks behind Pizza Libretto and Entoeca Sociale (Max Rimaldi and Jamie Cook) are partnering up with the chef behind Bar IsabelBar RavalHarry’s CharbroiledTennessee Tavern, and the incoming Quetzal (Grant van Gameren) to open a 136-seat restaurant called Rosalinda this spring.

While the address for the new plant-based project has yet to be announced, a press release bills the new spot as “a vibrant, feel-good vegan Mexican restaurant.”

Expect the menu, developed in conjunction with Quetzal chefs Kate Chomyshyn and Julio Guajardo, to focus on big and bold, Mexican and Baja flavours: jackfruit pibil, Tijuana-style broccoli, spicy carrots in mole, served along with light, low-alcohol cocktails from mixologist Owen Walker.
