Enjoy Asian American-inspired eats at Tio Baby's third Seattle pop-up

Apr 1 2021, 7:07 pm

Next Friday, visit Good Day Donuts for a highly anticipated Asian American-inspired pop-up by Chef Will of Tio Baby’s.

The pop-up is selling $50 food boxes designed to feed two people, with plenty of leftovers.

The boxes will include chips and queso, black olive and cheese pizza rolls, roasted broccoli and cauliflower with a soy garlic glaze, sesame ginger vinaigrette, fried shallot furikake and scallion, mixed lettuce salad, pineapple-chili glazed spare ribs, a lunchador sando with adobado-braised pork shoulder, telera roll, smoked tomato crema, refried bean, iceberg, pickled red onion, and jalapeno, and a lemon cake by Good Day.

The delicious boxes can be preordered through the Good Day website. 100% of proceeds from the pop-up will benefit Seattle BIPOC Organic which creates sustainable organic food systems for our communities.

The pop-up is the third in a series of four Tio Baby’s pop-ups, all of which will roll out before the brick-and-mortar restaurant opens in a soon-to-be-named location.

The next and final pop-up includes a collaboration with Bar Charlie on May 8.
