Splurge on a $300 Christmas dinner from Higgins Portland

Skip the clean-up and cooking time this Christmas with a Cassoulet Holiday Feast Box from Higgins.

The farm-to-table restaurant has survived the pandemic by transforming into a “traiteur,” a French-inspired deli and takeaway, which promotes the idea that food can be pre-prepared and taken home to reheat.

As part of their Christmas takeaway options, Higgins is selling $300 ready-made feast boxes that’ll feed the bellies of four adults.

Cassoulets, also known as rich casseroles, originated in Southern France. They typically feature slow-baked meat or vegetables and white beans, which are hearty and comforting winter fare.

The Higgins Cassoulet Holiday Feast Boxes include a starter of applewood smoked Sockeye salmon, or dips of herbed chevré, and Tourain du Périgord, a savory garlic soup from the Dordogne, and a salad of seasonal greens from Stoneboat Farm.

The main course features cassoulet of Champoeg Farm goose with confit, cured and roasted breast, and Toulouse-style sausages slow-baked in roasted goose stock with Ayers Creek Farm Tarbaise beans and a savory garlic and herb crust. If you’re vegetarian, you can opt for a vegetarian cassoulet of winter vegetables, forest mushrooms, and Tarbaise beans. Each cassoulet comes in a special Spanish enameled steel pan.

For dessert, Higgins has partnered with Michelle at Bella’s Italian Bakery for traditional Bûche de Noël for the chocolate lovers or holiday ricotta cheesecake with gingered cranberry compote.
