There’s just something incredible about eating piping hot bowls of ramen or delicious oodles of pho noodles, on a cold winter’s evening. Of course, while our love for ramen isn’t season specific, it’s a no-brainer that hot soup-soaked-noodles and cold-weather are a marriage made in heaven.

You know a ramen spot is amazing if they nail their vegetarian and vegan options too, and Marukin does just that. Their vegan Shoyu red ramen with vegetables, mushroom, and tofu is off the charts delicious.

This pan-Asian vegan hot spot whips up vegan ramen that gloriously competes with its meat ramen counterparts. The Ichiza Noodle Soup, with rice noodles, “chicken,” yu choy, cilantro, green onions, house chilli sauce and incredible broth made with 13 medicine herbs and spices is just as good as the description sounds.
